In a dictionary photos are primarily used to give the reader an image that looks like what the people communicating in the language described probably are thinking of. This may result in a different selection than botanists or photographers would make for valid reasons from their perspective. The picture you uploaded of Rumex acetosa shows a plant that looked somewhat different from the many specimens I have seen in the Netherlands, Belgium and Germany.
